I add spike original seasoning, you can purchase at Whole Foods, Amazon, Fresh Market or from their website spikeseasoning.com. You will love their seasoning, I always have three to five bottles in my spice cabinet at all times. I hope you will give this baked potato soup a try.
Ingredients:
4 large baking potatoes (about 2 3/4 lb.)
2/3 stick of butter
1/2 cup of flour
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. Spike seasoning
3 cups of Chicken Stock
3 cups of milk
8 oz. sour cream
1/4 cup of chopped green onions
10 bacon strips, cooked and crumbled
4 oz. shredded seriously sharp cheddar cheese
DIRECTIONS:
Bake potatoes at 350° for one hour, you may need an extra fifteen to twenty minutes or until tender.
Cool for about 15 minutes. Peel and scoop out the baked potatoes. I like to directly add a little salt and pepper on the baked potatoes, for added flavor.
In your favorite soup pan, melt butter and stir in flour, salt, pepper and spike until smooth.
Gradually add chicken stock and slowly add your milk, bring to a boil.
Cook on low simmer for about 10 minutes or until thickened, stirring often.
Remove from heat and whisk in sour cream.
Add baked potatoes stir and let low simmer for 10 minutes.
Garnish with bacon, cheese and green onions, enjoy!
