Oh my goodness! This is Awesome! So good for the holidays or in my opinion any day. Once you eat a bite you will be hooked. Makes a great Gift for teachers, neighbors, friends, coworkers, and the host of a dinner party. Easy and yummy, my two favorite things.
Ingredients:
1 cup granulated sugar
1 1/2 cup packed brown sugar
⅔ cups orange juice
⅔ cup vegetable oil
4 large eggs
2 tsp vanilla extract
2 cups freshly mashed sweet potatoes
3⅓ cups all purpose flour
2 tsp baking soda
½ tsp baking powder
1 tsp salt
4 tsp ground cinnamon
Glaze Ingredients:
1/2 cup powder sugar
1 tbs buttermilk or whole milk
1/2 tsp ground cinnamon
Directions:
Preheat oven to 350F and grease two 9×5 loaf pans.
In bowl, combine both sugars, orange juice, oil, eggs, vanilla extract, and sweet potatoes, mix on medium speed until fully incorporated.
In a separate bowl, combine flour and remaining dry ingredients. Whisk to combine well.
Add dry ingredients to wet ingredients, and mix just until combined. Do not over mix.
Divide batter into prepared loaf pans. Bake 60-65 minutes or just until a toothpick inserted in center comes out with a few tender crumbs attached.
Allow bread to cook completely in pan on wire rack. While bread is cooling make the glaze. In bowl add powder sugar, cinnamon mix together well, then add milk, mix well. Remove bread from pan and drizzle over bread.
