I must admit I am a pasta salad fan and one of my favorites in the grilling season, is this BLT Salad. It is a great side dish to anything you put on the grill and I love it by itself for dinner. It is cold and full of flavor. A very filling salad that is as colorful as it is delicious. I hope you give this salad an invite to your next grill out!
1 (16 oz.) box of your favorite pasta
1 1/2 cups mayonnaise
3/4 cup sour cream
3 tbsp. apple cider vinegar
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
freshly ground black pepper, to taste
5 green onions, thinly sliced
4 tomatoes, diced
1 cup of shredded lettuce
1 pound bacon, cooked and crumbled
Cook your pasta in salted water for 7-8 minutes. Drain well. While pasta is cooking, prepare the dressing.
In a large mixing bowl, whisk together the mayonnaise, sour cream, vinegar, and spices. When well mixed add cooked and drained pasta into the bowl stir dressing and pasta together. Then mix in chopped tomatoes, 3/4 of the bacon, and green onions. Cover and refrigerate 2-4 hours or overnight. I prefer overnight. Before serving add lettuce and remaining bacon. Happy Grilling!
