Today I am sharing one of the easiest cookie recipes I know, Snowball Cookies.
Snowballs are one of my favorite cookies, and really are very simple to make. For some reason I associate this cookie with Fall and Holiday time but really are yummy year round. I love them with a cup of coffee in the morning. So easy to make and give as gifts, they are pretty much full proof. I once read every southern woman should have a great tea or coffee cookie recipe, so I guess this is mine, lol! I hope you will give it a try.
Ingredients:
1 cup butter, softened
1 1/2 cups powdered sugar, divided
1 teaspoon vanilla
2 1/4 cups all purpose flour
1/2 teaspoon salt
2 teaspoons cinnamon, divided
3/4 cup chopped pecans
Directions:
Preheat oven to 375°.
Line two cookie sheets with parchment paper.
Mix butter, 1/2 cup powdered sugar, and vanilla with a mixer until fluffy.
Add flour, salt, 1 teaspoon cinnamon, and mix until the dough comes together.
Stir in the pecans. If dough is too soft, chill it until easily worked with your hands.
Scoop 1 tablespoon balls of dough and place on prepared cookie sheet.
Bake cookies for 6-8 minutes until bottoms are just slightly brown. Remove from oven and cool for 3-5 minutes, until you can handle them.
In a small bowl place remaining 1 cup powdered sugar and 1 teaspoon cinnamon, mix together. Roll each cookie in mixture until coated. Place on a rack to cool. Once cookies are cooled, roll them one more time in powdered sugar. Happy Baking!
