When the weather gets cold I start to get cravings for Chinese Food. It seems like it warms you up and is a cozy comfort food. I like to stir-fry at home and make fried rice, so I control how much salt goes in. I have stir fried a bunch of different vegetables, typical things you think of when you think of Chinese, but a friend gave me a recipe for stir-fried okra. I had never thought of using okra but it is delicious. This recipe is so good, I know you will love it! Thank you Ran!
Stir-Fried Okra
Ingredients
1 medium onion chopped
1 teaspoon of dry mustard seeds
1/2 teaspoon of ground cumin
1/4 teaspoon of crushed red pepper
2 tablespoons of coconut oil
1 pound of okra ( fresh or frozen)
3/4 teaspoon of salt
Directions
Heat oil in a large skillet, sauté first four ingredients over medium high heat 5 minutes or until onion is tender.
Add okra, sauté for 15 minutes or until okra is golden brown. Stir in salt and serve.
