Banana Pudding Cake

This dessert makes any meal you make seem like the holidays. A dessert that is easy and delicious, which can be served in so many ways. Makes a great gift to give or a wonderful addition to any party. Enjoy!

Ingredients:

2 very ripe medium bananas, roughly mashed
1 box butter-yellow cake mix
1 (4-serving size) package Jello banana cream instant pudding
4 large eggs, lightly beaten
1/2 cup buttermilk
1/2 cup water
¼ cup oil

Optional Simple Icing:
1 tablespoon of warm buttermilk + 1 cup powdered sugar

Directions:
Preheat oven to 350 degrees with rack on lower-middle position. Grease and flour a bundt pan and set aside.
In a large bowl, combine cake mix and instant pudding, mix together to loosen any lumps. Add eggs, water, buttermilk, and oil. Whisk just until incorporated. Fold in bananas until combined, do not over-mix.

Pour into prepared bundt pan, lightly shaking to even out the batter.
Bake 35-45 minutes, or just until a toothpick inserted in center comes out clean.

Cool completely in pan on rack. Once cool, use knife to separate cake from pan edges. Invert and remove cake. If desired, whisk together Simple Icing ingredients and drizzle over cake, or you can garnish with powdered sugar, sliced bananas, whipped cream, or fresh fruit. Happy baking!
