This is a tasty one mon! This is so delish, a must try, great for brunch, lunch, munch and hanging by the beach. As we start to shake off the cold and pull out our pastels we need a little sun and fun in our recipes. Jamaican Bread is a fun one to start with so get in that kitchen and bake up some sunshine!
Jamaican Bread
Ingredients:
2 cups of all purpose flour
1/2 teaspoon salt
3/4 teaspoon baking soda
1/2 cup sugar
1/2 cup dark brown sugar
2 large eggs
1/4 cup softened butter
3 mashed ripened bananas
1/4 cup Greek yogurt
3 tablespoons of dark rum
1/2 teaspoon vanilla extract
1/2 cup sweetened coconut
Jamaican Glaze
1/2 cup powdered sugar
2 tablespoons of lime or lemon juice
Directions:
Preheat oven to 350 degrees. In a bowl, combine flour, baking soda, and salt. Stir well and set aside. In a large bowl, beat sugar and butter until well blended. Add eggs, one at a time, mixing well after each addition. Add banana, yogurt, vanilla, and rum. Mix until blended. Add flour mixture and mix until moist. Stir in half a cup of coconut. Pour batter into 9X5 oiled or sprayed loaf pan. Sprinkle with coconut. Bake at 350 degrees for one hour or until toothpick comes out clean. Cool in pan for ten minutes on a wire rack. Remove from pan. Combine powdered sugar and juice. Drizzle over warm bread. Cool completely on wire rack.
P.S. You can substitute rum with Apple Cider and yogurt with sour cream.
