Taco Pasta

I enjoy pasta salad anytime of the year so when I saw this recipe for a quick easy taco pasta salad I couldn’t resist. It’s so yummy, I like to make a grilled cheese quesadilla to serve with it for a great meal. I sometimes substitute the black beans and use corn and even put some avocado in. I hope you will give it a try.

Ingredients:

8 oz of your favorite pasta

1 lb lean ground beef

1/4 cup chopped onion

1 packet of taco seasoning

2 cups halved cherry tomatoes

1 cup (4 oz) shredded sharp cheddar cheese( Mexican blend is good also)

1 can (15 oz) black beans, drained and rinsed

1 cup Catalina dressing

Directions:
Cook pasta according to package instructions; drain and rinse in cold water.

While pasta is cooking, in a large skillet, brown the beef. Drain excess oil, then add onion and taco seasoning. Cover and cook over low heat until onions are soft, let cool.

In a large bowl, combine the taco meat, pasta, tomatoes, cheese and beans. Toss with dressing. Top with parsley, cilantro, or chives. Cover and chill until ready to serve.
