Zucchini Pasta Skillet


This is a delicious one skillet recipe, which I love because it’s so easy, delicious and quick to clean up.


1 package (19 ounces) frozen cheese tortellini

1 pound ground beef

1 medium zucchini, sliced

1 small onion, chopped

3 cups of your favorite marinara or spaghetti sauce

1/2 cup beef broth

1/4 teaspoon pepper

1 tsp Garlic

2 medium tomatoes, chopped

1/2 cup cubed fresh mozzarella cheese

2 tablespoons minced fresh basil, divided


Cook tortellini according to package directions.

Meanwhile, in a large skillet, cook the beef, zucchini, garlic and onion over medium heat until meat is no longer pink and drain.

Drain tortellini and add to skillet.

Stir in sauce, broth and pepper.

Bring to a boil.

Reduce heat and simmer, uncovered, for 5 minutes.

Add the tomatoes, cheese, and 1 tablespoon basil let simmer on low for about two minutes.

Sprinkle with remaining basil and serve.
