Garden Caviar

If you are looking for something to do with all your garden goodies, this recipe has got you. I am a fresh guacamole and salsa fan, I can eat this anytime. I like to keep it made up in the fridge, ready to go! Most everyone calls it cowboy caviar but my name for this recipe is, Garden Caviar, give it a try. 

INGREDIENTS:

1 (12 oz.) frozen white shoepeg corn, thawed and drained

1 (15 oz.) can black beans, rinsed and drained

2 avocados chopped

1 large tomato diced

1 bunch green onions thinly sliced

1 jalapeño seeded and chopped

1/4 cup olive oil

1/4 cup red wine vinegar

2 tablespoons of fresh lime juice

1 clove garlic minced

3/4 cup cilantro chopped

1/4 cup green pepper, chopped

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon cumin

You favorite tortilla chips

DIRECTIONS:

In a mixing bowl combine all ingredients. 

After you mix together you can either refrigerate or serve at room temperature. 

Place in a pretty serving bowl and enjoy.
