
Banana bread that went on a tropical vacation! I enjoy banana bread, my mom made my favorite, but this is a summer time favorite of ours. So good served cold with a scoop of ice cream and a little umbrella. I hope you will give this a try.
Ingredients:
3 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups sugar
1 teaspoon cinnamon
3/4 cup chopped walnuts
3 eggs, beaten
1 cup grape seed oil
2 cups mashed ripe bananas
1 can 8 ounce crushed pineapple, drained
2 teaspoons vanilla
1 cup flaked coconut
1 cup maraschino cherries, diced
Directions:
Preheat oven to 350°
Butter or spray two 9×5 inch loaf pans.
In a large mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon.
Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut and cherries, stir until blended.
Pour batter evenly into the prepared pans.
Bake at 350° for 50-55 minutes, or until a tooth pick inserted into the center of a loaf comes out clean.
Cool for 20 minutes and serve.
