My grilling recipe today is so delicious and a must try. This recipe was given to me last year from a fellow Tennesseean. Not sure if it was his or was passed on to him from someone, but either way it is the bomb! Truly southern with a sweet tea brine, some Tennessee Honey Whiskey, and peaches!
Ingredients:
4-6 bone-in pork chops, 3/4-inch thick
Salt
Fresh ground pepper
Spike seasoning or your favorite spice.
3-4 cups of sweet tea ( brine for pork chops)
TN Honey Peach Sauce Ingredients:
½ cup Captain Rodney’s Peach Pie Jelly
4 tbsp. Jack Daniel’s TN Honey
¼ cup apple cider vinegar
2 tbsp. butter
2 tbsp. honey
2 fresh ripe peaches, unpeeled halved and pit removed
First salt and pepper your pork chops, rub seasoning in well.
brine: In a dish place pork chops in sweet tea brine and refrigerate for 1-2 hours. Remove pork chops and season again. Discard brine.
TN. Honey Peach Sauce:
Place butter in sauce pan and melt, add vinegar, increase heat to boil for one minute, stirring constantly. Reduce heat, add peach jelly, TN whiskey, honey and butter. Stir over low to medium heat for 3-4 minutes. Remove from heat and set aside.
Preheat grill to medium-high heat. Grill pork chops turning as needed, until your preferred doneness. While pork is grilling, place peach quarters on grill for about 2 minutes per side, until lightly charred. Then chop and add to sauce.
Baste the grilled chops with sauce the last few minutes of grilling. Remove let sit 2-3 minutes. Pour more sauce with peaches over pork chops and serve. Happy Grilling everyone!
