If you are looking for something to do with your leftover turkey this Thanksgiving, give this recipe a try. An awesome warm yummy soup to greet you after a long day of shopping, even if you do it from your iPad, it’s a cozy treat. If you do not have enough turkey you can substitute chicken. Light the fireplace and enjoy a cup of yummy soup!
Ingredients:
2 tablespoon oil
8 oz. sliced mushrooms
1 1/2 cup chopped celery
1 1/2 cup chopped carrots
1 small chopped onions
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
8 cups chicken broth
1 1/2 cup quick cooking or instant wild rice
4 1/2 cups shredded leftover turkey
1 cup sour cream
3 tablespoons chopped fresh parsley
Directions:
Heat oil in your favorite soup pan over medium heat. Add mushrooms, celery, carrots and onions, cooking until softened. Add flour, salt and pepper cook for about 5 minutes more.
Add broth and bring to a boil, scraping up any browned bits. Add rice and reduce heat to a simmer. Cover and cook until the rice is tender, about 15 minutes. Stir in leftover shredded turkey, sour cream, and parsley. Continue cooking for about 15-20 minutes. Happy Baking!
