Who doesn’t love a cool dip with some salty tortilla chips, it’s the epitome of summer, what makes this one a tad different is the layer of cream cheese, which I think gives it an elevated kick. I usually serve with a strawberry pineapple smoothie, It makes me feel like I’m on a tropical vacation!
1 package (8 oz) whipped cream cheese
1 can (16 oz) refried beans
1 cup salsa
1 cup sour cream plus 2 tablespoons of taco seasoning
2 cups shredded mexican cheese blend
2 cups shredded iceberg lettuce
1/2 cup sliced green onions
1 cup grape tomatoes, quartered
Spread whipped cream cheese in the bottom of a 9×13 casserole dish in an even layer.
In a bowl, stir together refried beans and salsa until evenly combined. Spread the bean mixture evenly on top of the cream cheese.
In another bowl stir together sour cream and taco seasoning and then spread over the beans.
Sprinkle cheese on top of the sour cream layer.
Sprinkle lettuce on top of cheese, and then top with green onions and tomatoes.
Serve with chips.
