Zucchini Meatloaf

If you love meat loaf and want to get more veggies into your diet, this is the recipe for you. It is so good and flavorful, super easy to make and I just love leftover meatloaf sandwiches, yummy. Give this one a try, you will be happy with the outcome. 

INGREDIENTS:

2 lb. Ground beef

1 cup Italian bread crumbs 

1/2 cup Grated Parmesan cheese

1 c. Milk

1 Egg, beaten

1 Onion, chopped

2 teaspoons Beef bouillon

1/2 teaspoon Baking powder

2 cup shredded zucchini

Sauce:

2/3 c. Brown sugar

1 cup Ketchup

1 Tablespoon Mustard

DIRECTIONS:
Preheat oven 350 degrees. 

In a bowl combine all meatloaf ingredients and mix thoroughly. 
Press into a 13″ x 9″  sprayed baking dish. 
Bake for 40 minutes. 

Sauce: Mix together. Pour over top of meatloaf and return to oven and bake for an additional 20 minutes. 

Cool for about 10 minutes. 
Cut, serve, and enjoy.
