Shortcake Bar Cake

As a kid I loved hearing the sound of the Ice Cream Man!

That sound stopped me in my tracks then I would run to get my money and find him. I can still hear that sound in my head ðŸŽ¶ 

My favorite item was the, Good Humor Strawberry Shortcake Bar. The recipe I’m sharing today is the taste of that ice cream bar, a childhood treat, in cake form and it’s delicious. If you were a fan like me give this cake a try. 

Ingredients:

One box white cake mix, plus ingredients on back of box to prepare the cake

3 oz box strawberry jello

1 cup boiling water

1 cup cold water

Frosting 

8 oz softened cream cheese

1½ cups heavy whipping cream

1 cup confectioners’ sugar

1 1/4 tsp vanilla extract

Strawberry Crunch Topping

20 crushed  Golden Oreos

1/4 cup melted butter

3 oz box strawberry jello powder

Fresh strawberries 

Directions:

Preheat oven to 350° 

Coat a 9×13 light rectangular baking pan with cooking spray and set aside. 

Prepare your cake mix according to package directions. 

Add the cake batter to the prepared pan and bake according to package instructions. 

Cool completely, then poke holes all over the cake. 

In a large measuring cup combine the first box of a strawberry jello add the boiling water and whisk until powder is dissolved. 

Add in the cold water and whisk together. 

Pour the liquid jello mixture evenly over the holes on the cake. Cover and refrigerate overnight. 

For the frosting in a stand mixer, beat the cream cheese with the paddle attachment until smooth and fluffy, about 1 minute. Scrape out and set aside in a medium bowl. 

Add the heavy cream, confectioners’ sugar and vanilla to the stand mixer bowl using the whisk attachment. 

Whisk on high speed for approximately 5-6 minutes or until stiff peaks form. 

Fold the cream cheese mixture into the whipped cream mixture until no streaks of cream cheese remain and everything is evenly incorporated. 

Spread the frosting over the cold cake in an even layer. 

For the topping, combine the coarsely crushed Golden Oreos, melted butter, and box of dry strawberry jello powder in a medium bowl until combined and thoroughly coated. 

Drop topping mixture evenly over the frosted cake and press to adhere to the frosting. 

Refrigerate for about 4 hours. 

Top with fresh strawberries and serve.
