Why Dr. Pepper Chicken BBQ, because my husband and son both love DP! That is their absolute favorite soda, so my son was coming home for the weekend and I wanted something easy to make while we were working on an outdoor project. I had a rotisserie chicken, I had picked up from Costco, and thought, bbq sandwiches would be perfect! So I opened the refrigerator and saw the DP and thought…I’m going to try something new, a new favorite was born! I served this on grilled buns with pickles but I have also put it over baked potatoes.
I hope you will give this recipe a try, it’s even better the next day.
Ingredients:
Rotisserie Chicken Breast pulled (I use Costco)
1 16.9 ounce bottle Dr. Pepper
1 tbs. Coconut oil
BBQ Sauce Ingredients:
1 1/2 cups ketchup
1/4 cup apple cider vinegar
1/4 cup Dr. pepper
1/4 cup packed brown sugar
2 tablespoons molasses or honey
1 1/2 tablespoon Worcestershire sauce
1/2 teaspoon black pepper
1 tablespoon of onion powder
1/2 teaspoon hot sauce (optional)
Directions:
In your favorite pan, I use a 5 quart pan. Melt coconut oil add chicken and lightly season. Cook for about 5 minutes on low heat. Then add one 16.9 ounce bottle of Dr. Pepper, stir, cover and let low simmer for 30 minutes.
Uncover pan stir, then add ketchup, vinegar, Dr. Pepper, brown sugar, molasses or honey and mix together well.
Now add, Worcestershire, black pepper, onion powder and hot sauce if desired, stir well and let simmer on low heat for about 25 minutes. Take off heat and let it sit covered for 5 minutes, then serve.
Happy Cooking 😊
