Pecan Coffee Cake

I enjoy a good coffee cake, when I was in college I made extra money by making and selling a butter crumb coffee cake. This recipe I’m sharing is pretty easy but includes my favorite, pecans. It has buttery crumbs and cinnamon pecan crunch! 

I hope you will give it a try. 

Ingredients:

Crumb

1 ½ cups finely chopped pecans

⅓ cup sugar 

⅓ cup brown sugar 

1 1/2 teaspoons cinnamon 

3 tablespoons melted butter 

Cake

2 cups all-purpose flour 

½  teaspoon salt 

1 teaspoon baking powder 

¾  teaspoon baking soda 

½  cup melted butter 

1 cup sugar 

2  large eggs 

1 ½  teaspoons vanilla extract 

1 cup sour cream 

Directions:


Preheat oven to 350°.

Butter an 8×10 baking dish.

Mix pecans, sugar, brown sugar, cinnamon, and melted butter thoroughly in a bowl until all ingredients are evenly coated in the butter. 


In a separate bowl, whisk together flour, salt, baking powder, and baking soda.


In another bowl, mix together butter and sugar until well blended. 

Add 1 egg and mix until mixture is smooth. 

Mix in second egg until thoroughly incorporated. 

Add vanilla and sour cream, mix together. 

Add flour mixture to wet ingredients. Mix until flour is incorporated. Be careful not to over mix. 


Spread one half of the batter evenly into the bottom of the prepared baking dish. 

Scatter one half of the crumb mixture evenly over the top of the batter. 

Top with the rest of the batter and spread carefully to evenly distribute. 

Add the rest of the crumb mixture on top and lightly press crumbs into batter. 

Bake in preheated oven for 30-35 minutes or until a toothpick comes out clean. Let cool about 15 minutes. Serve and enjoy!
