Homemade Taquitos

Who doesn’t love Mexican food, it’s fun and delicious! If you want a quick and easy dinner or snack, you have to give this, no fail recipe a try. Come home put it together and while it is baking, you can change clothes catch up with the family and relax. Serve with black beans, salad, or rice, to make it a meal.

Ingredients:

3 cups of cooked shredded Chicken ( use rotisserie chicken to save time)
6 oz. Cream cheese
1/3 cup Sour cream
1/2 cup of Salsa
1 1/2 cup of raw spinach Spinach
1 1/2 cup of Colby Jack Cheese
8 corn tortillas

Directions:

Preheat oven to 350.
In a mixing bowl put in chicken, cream cheese, sour cream, salsa, spinach, and colby jack cheese. Stir until well combined. Spoon mixture down the middle of corn tortilla, roll up, and place rolled side down in a buttered casserole dish. Bake in oven at 350 for 30 minutes. Serve warm with salsa or my favorite sour cream with a little lime juice, cilantro, and sea salt, yummy. Happy baking!
