Mama’s Sweet Potato Pie

I love sweet potatoes!
Growing up my Mama would make me sweet potato pie every Thanksgiving, it was a birthday treat. She did that until she passed away. I would make pumpkin pies and she made the sweet potato pies, what I would do to taste one of her pies again, she passed in 2019. This year enjoy your family and friends making memories and cooking together. I hope you will give this recipe a try and make it a favorite in your family. 

Ingredients 

4 medium sweet potatoes

1/2 stick butter, softened

1/4 cup sugar

3/4 cup brown sugar

2 eggs, beaten

1 teaspoon pure vanilla extract

1 1/2 teaspoons ground cinnamon

3/4 cup evaporated milk or heavy whipping cream

1 unbaked deep dish pie crust

Whipped Cream 

Directions 

Preheat oven to 350°

Bake sweet potatoes for 1 hour in the oven on a baking sheet or until we’ll done. 

When done, let cool for about 20 minutes. 

Scrape the pulp out of the skin, transfer to a large bowl, and mash. Set aside. 

Pie shell thawed to room temp and prick with a fork but do not pre-bake. 

In a medium bowl, beat together butter, sugar, and brown sugar until creamy. Add eggs, vanilla, cinnamon. 

Add evaporated milk and stir mixture into sweet potatoes. 

Beat together with mixer until smooth and pour into a pricked unbaked deep dish pie shell. 

Bake for 50 minutes or until center of pie is firm and a toothpick comes out clean. 

Cool and serve topped with whipped cream.
