Easy Healthy Homemade Mayonnaise

Ingredients

1 cup of extra light tasting olive oil

1 large egg

The juice of half a lemon or lime (3 teaspoons)

A generous pinch of salt

Wide mouth pint jar

Directions

Crack egg into jar, add lemon or lime juice and salt. Pour in olive oil, let sit a few seconds until egg is sitting on the bottom of the jar. Insert Immersion blender, place blender all the way to bottom.
Turn on blender and do not move it for twenty seconds the mayo will start coming up the jar, after twenty seconds, with the mayo coming up the jar, slowly move blender up towards top, move around jar mixing any oil that might need a bit more blending.

Now you have Creamy healthy mayo!

This makes a one pint jar. Will keep in refrigerator for two weeks in air tight jar.

Once you make this healthy, clean, no chemicals, sugar or preservatives mayo, you will not want to go back to the store bought stuff! If you want, you can add your favorite herbs or spices, sun dried tomatoes or hot sauce to this recipe and make it your own.

I like to pick a a fresh tomato and make a, “Mater Sandwich” yummy yummy for the tummy.
