This summertime corn salad is so yummy and easy. It will become a go to recipe for all your BBQ’s. Quick, easy, and unbelievably delicious! Happy Grilling!
Ingredients:
6 cups about 8 ears of fresh corn removed from the cob or 6 cups frozen corn kernels, thawed
1/3 cup Mayo or homemade mayonnaise (recipe on blog)
1/4 cup crumbled Cotija cheese, plus more for garnish
2 tablespoons fresh lime juice
2 tablespoons chopped cilantro, divided
1/4 teaspoon chipotle or chili powder
Pinch of salt
Directions:
Heat a large skillet over medium-high heat. Add 1/3 of the corn and toast the kernels while occasionally shaking the pan. When the kernels become golden brown and the start popping, 8-10 minutes, transfer to a medium bowl. Repeat with the remaining corn.
In a medium bowl, stir together the mayonnaise, cheese, lime juice, 1 1/2 tablespoons cilantro, chili powder and salt. Add the corn and gently stir until combined.
Sprinkle the remaining 1/2 tablespoon cilantro and extra Cotija on top before serving
Tip: Cotija cheese is a hard and crumbly Mexican cheese. It can be found at most supermarkets in the refrigerated section. Parmesan cheese is a good substitute. Happy Grilling!
