I love apple season, we enjoy a road trip to a great apple orchard. Frozen apple cider and a fried pie, oh my! But for everyday living we try to eat more healthy and this easy healthy muffin recipe is so yummy, great for breakfast or snack.

🍎 Kelli’s Healthy Apple Muffin Recipe 🍎
Ingredients:
2 Cups of Organic Unsweetened Applesauce
1 Apple Cut in small pieces
1/2 Cup of Almond Flour
1/3 Cup of Coconut Flour
1/4 Cup of Organic Dark Brown Sugar (optional)
4 eggs
1/2 Cup of Shredded Coconut
2/3 Cup of Finely Chopped Walnuts
2/3 Cup of Finely Chopped Pecans
1 1/2 Teaspoon of Cinnamon
1/2 Teaspoon of Baking Soda
1/4 Teaspoon of Salt
Directions:
Preheat oven to 350 degrees. Line or grease muffin pan. Makes 12 muffins.
Mix eggs, applesauce, brown sugar and spices together in a large bowl. Add nuts and shredded coconut, stir until combined.
In another bowl, combine almond and coconut flour, baking soda, salt and mix together. Stir dry ingredients into wet until fully incorporated. Fold in apple pieces.
Spoon batter into greased or lined muffin pan. Bake for 30 minutes or until golden brown.
