Cucumber Sandwiches

If you are looking for a way to use all those cucumbers from your garden and save calories this is a great recipe. No bread sandwiches, are a great way to eat a light lunch that fills you up without being heavy on your tummy. So you can get back to enjoying all those summer activities. I like to use my grape tomatoes by putting them on the toothpick and sticking through the fresh cucumbers sandwich.

Ingredients:

Sliced Turkey (I use Boar’s Head Maple Glazed Turkey Breast)

Cooked Bacon (I used one full piece, cut in half for each sandwich)

Ranch Dressing

Muenster Cheese, Sliced

Full Cucumbers, Peeled and Sliced Vertically

Wood Toothpicks

Directions:

Cook your bacon.

Wash and peel cucumbers.
Cut the ends off and then cut your cucumbers in half horizontally then in half again vertically.

You will end up with 4 nice long pieces enough to make 2 sandwiches per cucumber.

Cut cheese.

To assemble the sandwiches, drizzle a bit of ranch on the top half of the cucumber then add turkey, cheese, and bacon. To hold it all together use toothpicks. Enjoy!😊
