Free Range Chicken, jointed
4 Organic Lemons, washed
12 Cloves Garlic
1/2 cup of melted Organic Coconut Oil ( more or less your preference)
1/2 cup Organic Basil
Sea Salt & Pepper
Directions
Either buy your chicken cut or have your butcher to joint your Chicken or if you have a good sharp knife you can do this yourself. You can find a how to video on YouTube, it is very simple. Cut it into 6 or 8 pieces whatever your preference. Preheat the oven to 400 degrees.
Put the Chicken pieces in a roasting pan on top of the 12 Garlic Cloves. Squeeze three of the lemons all over the Chicken, be sure to catch all the seeds, after squeezing throw lemons into the roasting pan, minus seeds.
Drizzle the melted Organic Coconut Oil over the Chicken. Season well with Salt & Pepper and cook for around 30 minutes at 400 degrees.
Turn chicken at this point to ensure that the Chicken is browning evenly. Also make sure that the garlic is cooking but not burning. Cook for 15 minutes.
Pull out chicken and turn oven down to 350 degrees. Turn chicken and give it another squeeze of lemon and add a half cup of rough chopped Basil. Place back in oven and cook for 10-15 minutes.
Pull cooked chicken out of the oven, let It to stand for 10 minutes or so before serving. Drizzle the extra sauce over the Chicken because this is delicious stuff, too good to waste, It will Rock your World! Healthy and delicious.
